Ingredients

- 5 oz canned light tuna, drained
- 1/4 celery stick, minced
- Fresh Italian parsley, minced
- 1½ cups shredded cheese (Monterey Jack recommended)
- 1 egg
- 1 tbsp mayonnaise (or full-fat Greek yogurt)
- 1 tbsp sweet relish (or ½ tsp lemon juice)
- ¼ cup flour (chickpea flour works great!)
- ¼ tsp each of garlic powder, onion powder, ground black pepper

Don't have sweet relish? A touch of lemon juice works wonderfully to balance the flavors!

Instructions

1. Drain the Tuna: Make sure to remove all excess water from the canned tuna.

2. Mix It Up: In a large bowl, combine all ingredients and mix thoroughly.

3. Prepare Your Waffle Maker: Heat it up and grease with unsalted butter or oil spray.

4. Waffle Time: Scoop a heaping tablespoon of tuna mixture onto the waffle maker. Grill for 2-3 minutes until golden and crispy.
